I want to start eating vegan because of health issues that have my doctors stumped. I don’t make a lot of money and I know my family wouldn’t join me in this, so I will need to make two meals. I don’t know how to do this cheap and while getting the nutrients I should be getting (that I probably am not getting now). I need some guidance.
Thank you
You might also consider following The Vegan RD blog, as she often writes about important food groups and nutrients for vegans. http://www.theveganrd.com/
One last suggestion is to check out the Kitchen Treaty blog. The author is a vegetarian (not vegan) and her husband is not. So she posts recipes with alterations to make both of them happy. http://www.kitchentreaty.com/ Maybe you could modify recipes instead of making two completely separate meals.
You might also consider seeing a dietitian, who could provide some individualized recommendations. You can search here. http://www.eatright.org/find-an-expert
Best of luck to you on your new dietary adventure!

Hi Megan,
Thanks for your comment/question. It is sometimes a challenge when you have different family members following different diets. To start, I’d recommend the book “Becoming Vegan”. It’s written by dietitians and it addresses nutrient intake, etc. http://www.amazon.com/Becoming-Vegan-Comprehensive-Reference-Plant-Base-ebook/dp/B00O98QBX4/ref=sr_1_2?ie=UTF8&qid=1450324668&sr=8-2&keywords=becoming+a+vegan
