A smooth, refreshing way to enjoy coffee in the morning with a little added nutrition.

Ingredients

  • 2 dates, pitted (about 25 g each)
  • 1/4 cup sliced almonds
  • 1 vanilla bean, sliced lengthwise and seeds scraped from the inside
  • 1/2 cup cold brew coffee (I followed the method used by Food 52, but you could use one of the many bottled products out there as well.)

Instructions

  1. Make the cold brew coffee ahead of time. You’ll need about 12 hours for this. Strain.
  2. Put the dates, almonds, and vanilla bean seed into a wide mouth pint and a half mason jar. Fill to the 8 oz. marking with water. Cover and put into the refrigerator to soak at least 8 hours or overnight.
  3. Using a hand blender, blend the dates, almonds and vanilla bean for at least a minute or until no large pieces remain. The pint and a half mason jar works perfectly for this; I just stuck the hand blender right down inside it, but I think a quart liquid measuring cup would stand in nicely too.
  4. Add the cold brew and blend briefly until mixed. Enjoy immediately or refrigerate and enjoy later.
