Cherry Maple Granola

This granola has a roasted, caramelly flavor that goes with fruit, yogurt, or absolutely anything.

Ingredients

  • 2 cups rolled oats
  • ¼ cup dark brown sugar
  • ¼ teaspoon cinnamon
  • ¼ cup unsweetened coconut flakes or shredded coconut
  • ¼ cup dried tart cherries
  • 1/3 cup sliced almonds or roughly chopped pecans
  • 4 tablespoons vegan butter
  • ¼ cup pure maple syrup

Instructions

  1. Preheat oven to 325°.
  2. In a bowl, stir together oats, brown sugar, cinnamon, coconut, cherries, and almonds.
  3. Combine vegan butter and maple syrup in a small saucepan; heat over low until melted. Pour over oat mixture and stir until well coated.
  4. Spread out on baking sheet. Total baking time is 25 minutes; I like to stir it about halfway through.

Notes

Adapted from Williams-Sonoma’s Honey Granola. It makes about 3 1/2 cups total.

I like Bob’s Red Mill Coconut Flakes since they’re large pieces that hold their own against the cherries and nuts in this recipe. And my choice for vegan butter is typically Earth Balance Vegan Buttery Sticks.
